My amazing kitchen assistant and I whipped up some waffles for Father’s Day brunch last Sunday. I was feeling under the weather but luckily Emerson was able to help me measure ingredients and stir the batter — they couldn’t have been more delicious (recipe below)! We spent most of the hot day inside napping and relaxing… if only every day were a holiday! Check out the sweet mug E painted for Nic at daycare!

Wonderful Waffle Batter

2 c flour
1 tbsp sugar
3/4 tsp salt
1/2 tsp baking soda
1/2 c powdered buttermilk
2 eggs
1/4 tsp vanilla
1/2 c sour cream
1/4 c vegetable oil
1-1/4 c seltzer water (club soda)

Add wet ingredients to dry and mix!
